Chocolate Cookies

I am not a professional cookie decorator yet, maybe only bake them once a year) This holiday season my kids could not wait to make some yummy cookies with me and by could not wait I mean really could not wait…. So I have found this very simple and yummy recipe by Autumn Carpenter that does not require any waiting and refrigerating time for the dough vs traditionally 4 hours or overnight. Isn’t it just great?! We had tons of fun mixing, baking and eating it all within 2 hours! Of course most of these yumminess have not survived to icing and decoration stage)

• 1 cup (2 sticks, 225 g) of unsalted butter,
• 11⁄2 (340 g) cup granulated sugar
• 2 eggs
• 2 teaspoons vanilla
• 3 cups (375 g) all-purpose flour
• 2/3 cup (65 g) unsweetened cocoa powder
• 1⁄2 teaspoon salt

In a large bowl, blend flour, cocoa powder and salt.
Mix the butter and sugar in an electric mixer on
medium speed for two or three minutes or until the
mixture is light and fluffy. Scrape the bowl.
Add the eggs and vanilla, mixing on low until thoroughly blended. Scrape the bowl. Add the flour mixture, one cup at a time. Scrape the bowl after adding each cup of flour. Mix until just incorporated. Do not over mix, or the dough will toughen.
Use the dough immediately, or place the dough in the refrigerator until ready to roll.
Bake cookies in a 350 F (175 C) oven for 8-10 min-
utes or until no indentation is made when touched.
Yields: 36 cookies, 3-4″ (7.5-10 cm)
